This is the recipe to reach for when you have three bananas turning brown on the counter. The condensed milk does double duty as sweetener and moisture, and self-rising flour means no measuring out baking powder or salt.

  • 3 very ripe bananas, mashed
  • 2 cups self-rising flour
  • 1 can (14 oz) sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the bananas, then stir in the condensed milk until combined.
  3. Fold in the self-rising flour just until no streaks remain — don't overmix.
  4. Pour into the pan and bake 45–55 minutes, until a toothpick comes out clean.
  5. Cool 15 minutes in the pan before turning out.

Add-Ins & Notes

Fold in a handful of chocolate chips or chopped walnuts if you like. No self-rising flour? Use 2 cups all-purpose flour plus 3 tsp baking powder and 1/2 tsp salt. The riper the bananas, the sweeter and more banana-forward the loaf.
