Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning · 1/4 tsp red pepper flakes
  • Fresh basil, to serve

Instructions

  1. Season the chicken. Sear in olive oil over medium-high, ~5 min per side until golden. Remove and set aside.
  2. Lower the heat, add garlic, cook 30 seconds. Add broth, cream, parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  3. Simmer 3–4 minutes until the sauce thickens slightly.
  4. Return the chicken, spoon the sauce over, and simmer 8–10 minutes until cooked through (165°F).
  5. Finish with fresh basil. Serve over pasta, rice, or mashed potatoes.

Make-Ahead & Swaps

Chicken thighs work beautifully here and stay juicier. For a lighter sauce, swap half the cream for extra broth and finish with a splash of the reserved pasta water. Leftovers keep 3 days and reheat gently on the stove.
