Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan
- 1/3 cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning · 1/4 tsp red pepper flakes
- Fresh basil, to serve
Instructions
- Season the chicken. Sear in olive oil over medium-high, ~5 min per side until golden. Remove and set aside.
- Lower the heat, add garlic, cook 30 seconds. Add broth, cream, parmesan, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
- Simmer 3–4 minutes until the sauce thickens slightly.
- Return the chicken, spoon the sauce over, and simmer 8–10 minutes until cooked through (165°F).
- Finish with fresh basil. Serve over pasta, rice, or mashed potatoes.
Make-Ahead & Swaps
Chicken thighs work beautifully here and stay juicier. For a lighter sauce, swap half the cream for extra broth and finish with a splash of the reserved pasta water. Leftovers keep 3 days and reheat gently on the stove.
